Indian-Inspired Cholesterol-Lowering Chicken

A heart-healthy Indian-inspired chicken recipe designed to support a diet aimed at lowering high cholesterol, packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into cubes
- 1 cup chickpeas, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1 cup low-sodium vegetable broth
- 1 cup diced tomatoes
- 1 cup spinach
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add onions, garlic, and ginger. Saute until onions are translucent.
Add chicken cubes and cook until browned on all sides.
Stir in turmeric, cumin, coriander, paprika, cinnamon, and cayenne pepper. Cook for 1 minute.
Add chickpeas, vegetable broth, and diced tomatoes. Bring to a simmer and cook for 15 minutes.
Add spinach and cook until wilted.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
