Healthy Beef Stroganoff

A heart-healthy version of the classic beef stroganoff, packed with fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 can (15 oz) lentils, drained and rinsed
- 1 cup vegetable broth
- 2 tbsp soy sauce
- 1 tsp paprika
- 1/2 tsp thyme
- 1/2 cup plain Greek yogurt
- Salt and pepper to taste
- 8 oz whole grain egg noodles, cooked
Instructions
In a large skillet, heat olive oil over medium heat.
Add onions and garlic, sauté until fragrant.
Add mushrooms and cook until they release their juices.
Stir in lentils, vegetable broth, soy sauce, paprika, and thyme. Simmer for 10 minutes.
Remove from heat and stir in Greek yogurt. Season with salt and pepper.
Serve over cooked whole grain egg noodles.
