Beef and Bell Pepper Stir-Fry

A delicious and heart-healthy beef stir-fry with colorful bell peppers, inspired by Asian cuisine.
Ingredients
- 1 lb beef sirloin, thinly sliced
- 2 bell peppers, thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp grated ginger
- 1/2 tsp red pepper flakes
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
In a bowl, mix together soy sauce, rice vinegar, honey, ginger, and red pepper flakes. Marinate the beef slices in this mixture for 10 minutes.
In a large skillet or wok, heat olive oil over medium-high heat. Add minced garlic and sliced onion, and sauté until fragrant.
Add marinated beef slices to the skillet and stir-fry until browned on all sides.
Add sliced bell peppers to the skillet and continue to stir-fry until the vegetables are tender-crisp.
Season with salt and pepper to taste. Serve hot over steamed brown rice or quinoa.
