Mexican-Inspired Soluble Fiber Bowl

A delicious and heart-healthy Mexican-inspired bowl packed with soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
Cook quinoa according to package instructions.
In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, avocado, cherry tomatoes, and cilantro.
In a small bowl, whisk together lime juice, cumin, chili powder, salt, and pepper.
Pour dressing over the quinoa mixture and toss to combine.
