Fiber-Rich Noodle Soup

A delicious and heart-healthy noodle soup packed with fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 8 oz whole grain noodles
- 4 cups low-sodium vegetable broth
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup diced carrots
- 1 cup chopped kale
- 1/2 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp olive oil
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat. Add garlic and ginger, sauté for 1-2 minutes.
Add carrots, mushrooms, and kale. Cook for another 5 minutes until vegetables are slightly softened.
Pour in vegetable broth and bring to a simmer. Add chickpeas and noodles, cook for 10-12 minutes until noodles are tender.
Season with salt and pepper to taste. Stir in parsley before serving.
