Vegan Avocado Burger

A delicious and heart-healthy vegan burger packed with plant-based proteins, healthy fats, and fiber to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 ripe avocado, mashed
- 1/2 cup cooked quinoa
- 1/4 cup diced onion
- 1/4 cup diced tomato
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup oat flour
- 4 whole wheat burger buns
- Toppings: lettuce, sliced tomato, pickles
Instructions
In a large bowl, mash the black beans with a fork until mostly smooth.
Add the mashed avocado, quinoa, onion, tomato, garlic, cilantro, cumin, paprika, salt, and pepper to the bowl. Mix well to combine.
Gradually add oat flour to the mixture until it reaches a thick, moldable consistency.
Divide the mixture into 4 equal portions and shape them into burger patties.
Heat a non-stick skillet over medium heat and cook the patties for 5-7 minutes on each side, until browned and heated through.
Toast the whole wheat burger buns in the skillet for 1-2 minutes.
Assemble the burgers by placing a patty on the bottom bun, adding lettuce, tomato slices, pickles, and the top bun.
Serve the vegan avocado burgers hot and enjoy!
