Purple Sweet Potato Brownies

Delicious and heart-healthy brownies made with purple sweet potatoes, rich in soluble fiber and plant-based proteins, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 2 medium purple sweet potatoes, peeled and cubed
- 1/2 cup almond flour
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup cocoa powder
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
Instructions
Preheat the oven to 350°F (180°C) and grease a square baking dish.
Steam the cubed purple sweet potatoes until fork-tender, then mash them in a bowl.
Add almond flour, melted coconut oil, maple syrup, cocoa powder, vanilla extract, baking powder, and salt to the mashed sweet potatoes. Mix until well combined.
Fold in dark chocolate chips.
Pour the batter into the prepared baking dish and smooth the top.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Let the brownies cool before slicing into squares and serving.
