Spicy Baked Salmon with Turmeric Cauliflower Rice

A flavorful and heart-healthy dish that combines spicy baked salmon with turmeric cauliflower rice, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 4 salmon fillets
- 2 tbsp olive oil
- 1 tsp turmeric
- 1 head of cauliflower, grated
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, mix together 1 tbsp olive oil, turmeric, salt, and pepper. Rub the mixture over the salmon fillets and place them on the baking sheet.
Bake the salmon for 15-20 minutes until cooked through and flaky.
In a large skillet, heat the remaining olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent.
Add the grated cauliflower, cumin, coriander, red pepper flakes, salt, and pepper. Cook for 5-7 minutes until the cauliflower is tender.
Serve the spicy baked salmon on a bed of turmeric cauliflower rice. Garnish with fresh cilantro and enjoy!
