Spicy Tandoori Salmon with Lentil Salad

Ingredients

  • 2 salmon fillets
  • 1/4 cup Greek yogurt
  • 2 tbsp tandoori spice mix
  • 1 lemon, juiced
  • 1 cup green lentils, cooked
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh mint, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

Preheat the oven to 400°F (200°C).
In a bowl, mix the Greek yogurt, tandoori spice mix, and lemon juice. Coat the salmon fillets with this mixture and let them marinate for 15 minutes.
Place the marinated salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
In a large bowl, combine the cooked lentils, diced cucumber, bell pepper, red onion, and chopped mint. Drizzle with olive oil and season with salt and pepper. Toss to combine.
Serve the tandoori salmon hot with the lentil salad on the side. Enjoy!
