French-Inspired Lentil Stew

A delicious and heart-healthy vegan lentil stew inspired by French cuisine, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 cup dried green lentils, rinsed and drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
In a large pot, heat olive oil over medium heat.
Add the onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
Stir in the lentils, diced tomatoes, vegetable broth, thyme, rosemary, salt, and pepper.
Bring the stew to a boil, then reduce heat to low and simmer for 30-40 minutes, or until lentils are tender.
Adjust seasoning if needed and serve hot.
