Soluble Fiber-Rich Middle Eastern Curry

A delicious and heart-healthy Middle Eastern-inspired curry packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) coconut milk
- 2 cups spinach, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add chopped onion, garlic, and ginger. Sauté until fragrant.
Stir in turmeric, cumin, coriander, cinnamon, and cayenne pepper. Cook for another minute.
Add chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15 minutes.
Stir in chopped spinach and cook until wilted.
Season with salt and pepper to taste.
Serve the curry hot, garnished with fresh cilantro.
