Fiber-Rich Quinoa Salad with Avocado Dressing

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 avocado
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Instructions

Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes.
In a blender, combine the avocado, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth to make the dressing.
In a large bowl, mix the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley. Pour the avocado dressing over the salad and toss gently to combine.
Serve the quinoa salad in bowls and enjoy!
