Indian-inspired High Fiber Vegan Lentil Curry

A delicious and heart-healthy vegan lentil curry with Indian flavors, perfect for lowering high cholesterol.

Ingredients

  • 1 cup dried brown lentils, rinsed
  • 2 cups water
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 can diced tomatoes
  • 1 can coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
In a separate pan, heat olive oil over medium heat. Add the onion, garlic, and ginger, and sauté until softened.
Stir in the turmeric, cumin, coriander, and garam masala, and cook for another minute until fragrant.
Add the diced tomatoes and coconut milk to the pan. Bring to a simmer and cook for 10 minutes.
Once the lentils are cooked, add them to the curry mixture. Season with salt and pepper to taste.
Simmer for another 10 minutes to allow flavors to meld together.
Serve hot, garnished with fresh cilantro. Enjoy!
