Mediterranean-Inspired Soluble Fiber Beef

A delicious Mediterranean-inspired beef recipe rich in soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 lb lean beef, sliced into strips
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
In a large skillet, heat olive oil over medium heat.
Add onions and garlic, sauté until fragrant.
Add beef strips and cook until browned.
Stir in bell pepper, zucchini, and cherry tomatoes.
Season with oregano, thyme, salt, and pepper.
Cook for another 5-7 minutes until vegetables are tender.
Remove from heat and stir in kalamata olives and parsley.
