Mediterranean-Inspired Grilled Chicken Breast

A heart-healthy Mediterranean-inspired grilled chicken breast recipe that is rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Juice of 1 lemon
- 1/4 cup chopped fresh parsley
Instructions
In a small bowl, mix together olive oil, garlic, oregano, basil, paprika, salt, and pepper.
Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes.
Preheat grill to medium-high heat. Remove chicken from the marinade and discard the excess marinade.
Grill chicken breasts for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Remove chicken from the grill and let it rest for 5 minutes. Squeeze lemon juice over the chicken and sprinkle with chopped parsley before serving.
