Mediterranean Chickpea Salad with Lemon Tahini Dressing

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/3 cup tahini
- 1/4 cup lemon juice
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
In a large mixing bowl, combine the chickpeas, cucumber, bell pepper, red onion, olives, parsley, and mint.
In a small bowl, whisk together the tahini, lemon juice, olive oil, garlic, salt, and pepper to make the dressing.
Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
Adjust seasoning to taste, adding more salt, pepper, or lemon juice if needed.
