Fiber-Rich Chutney

A delicious and heart-healthy chutney inspired by Indian cuisine, designed to support a diet aimed at lowering high cholesterol. This chutney is packed with soluble fiber, plant-based proteins, and healthy fats, while avoiding saturated fats, cholesterol, and refined sugars.
Ingredients
- 1 cup chopped fresh coriander leaves
- 1/2 cup chopped mint leaves
- 1/2 cup chopped onion
- 1/4 cup chopped green chili
- 1 tablespoon grated ginger
- 1 tablespoon lemon juice
- 1/4 teaspoon cumin powder
- Salt to taste
- 1 tablespoon olive oil
Instructions
In a blender or food processor, combine coriander leaves, mint leaves, onion, green chili, ginger, lemon juice, cumin powder, and salt.
Blend the ingredients until smooth, adding a little water if needed to reach desired consistency.
Heat olive oil in a pan over medium heat.
Add the blended chutney to the pan and cook for 5-7 minutes, stirring occasionally.
Remove from heat and let it cool before serving.
