Ingredients
- 2 cups vegetable broth
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 garlic clove, minced
- 1 inch ginger, grated
- 1 small carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1 cup shiitake mushrooms, sliced
- 1/2 block firm tofu, cubed
- 2 oz rice noodles
- 1 green onion, chopped
- 1 tbsp cilantro, chopped
- 1 tsp sesame seeds
Instructions
In a pot, bring vegetable broth, soy sauce, sesame oil, garlic, and ginger to a simmer.
Add carrot, bell pepper, mushrooms, and tofu to the pot. Cook for 5 minutes.
Add rice noodles and cook according to package instructions.
Divide the noodle soup into bowls and top with green onion, cilantro, and sesame seeds.
