High-Protein Indian Soyabean Salad

A cholesterol-lowering salad inspired by Indian flavors, packed with heart-healthy ingredients and high in plant-based protein.

Ingredients

  • 1 cup boiled soybeans
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh coriander leaves
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • 1/2 teaspoon black pepper
  • Salt to taste

Instructions

In a large mixing bowl, combine boiled soybeans, cucumber, cherry tomatoes, red onion, and coriander leaves.
In a small bowl, whisk together lemon juice, olive oil, cumin powder, black pepper, and salt.
Pour the dressing over the salad ingredients and toss gently to combine.
Serve the salad immediately or refrigerate for later use.
