Protein-Packed Indian Soybean Salad

Ingredients

  • 1 cup cooked soybeans
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 red onion, thinly sliced
  • 1 tomato, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder

Instructions

In a large mixing bowl, combine cooked soybeans, cucumber, bell pepper, red onion, tomato, and cilantro.
