Indian-inspired Spiced Scrambled Eggs

Ingredients
- 2 eggs
- 1/2 onion, finely chopped
- 1/2 bell pepper, diced
- 1/2 tomato, chopped
- 1/2 tsp turmeric powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp red chili powder
- Salt to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
In a bowl, beat the eggs with turmeric, cumin, coriander, red chili powder, and salt.
Heat olive oil in a pan over medium heat.
Add onions and bell pepper to the pan and sauté until soft.
Add tomatoes to the pan and cook for another 2 minutes.
Pour the beaten eggs into the pan and scramble until cooked through.
Garnish with fresh cilantro and serve hot.
