Indian-inspired Fiber-Rich Egg Curry

Ingredients

  • 2 eggs
  • 1 cup chopped spinach
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika
  • 1/2 tsp garam masala
  • 1 tbsp olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

Boil the eggs in a pot of water for 8-10 minutes, then cool, peel, and set aside.
In a pan, heat olive oil over medium heat and sauté garlic, ginger, and onions until fragrant.
Add tomatoes, bell peppers, spinach, and all the spices. Cook until vegetables are tender.
Gently place the boiled eggs in the curry mixture, cover, and simmer for 5 minutes.
Garnish with fresh cilantro and serve hot with brown rice or whole wheat naan.
