Mediterranean Chickpea Pasta

A delicious and heart-healthy pasta dish inspired by the flavors of the Mediterranean, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 8 oz whole grain or lentil pasta
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and red onion, sauté until fragrant.
Add chickpeas, cherry tomatoes, and olives to the skillet. Cook for 5-7 minutes until the tomatoes start to soften.
Add cooked pasta to the skillet. Toss everything together and cook for another 2-3 minutes.
Drizzle lemon juice over the pasta, season with salt and pepper. Stir in fresh parsley.
Serve hot, garnished with additional parsley if desired.
