Mediterranean Pasta Delight

A delicious and heart-healthy pasta recipe inspired by the Mediterranean diet, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 8 oz whole grain pasta
- 1 can chickpeas, drained and rinsed
- 2 cups cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and chopped
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add garlic, oregano, and red pepper flakes, and sauté for 1-2 minutes until fragrant.
Add chickpeas, cherry tomatoes, and olives to the skillet. Cook for another 5-7 minutes until the tomatoes are softened.
Toss in the cooked pasta and season with salt and pepper. Cook for an additional 2-3 minutes to combine all flavors.
Serve the Mediterranean pasta in bowls, garnished with fresh basil leaves. Enjoy!
