Mediterranean Chickpea Pasta

A delicious and heart-healthy pasta dish inspired by the Mediterranean diet, designed to support lower cholesterol levels.
Ingredients
- 8 oz whole wheat pasta
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup Kalamata olives, sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and red onion, sauté until fragrant.
Add chickpeas, cherry tomatoes, olives, lemon juice, and oregano to the skillet. Cook for 5-7 minutes until heated through.
Add cooked pasta to the skillet and toss to combine. Season with salt and pepper.
Divide the pasta into bowls, garnish with fresh parsley, and serve hot.
