Mediterranean-Inspired Pasta

A delicious and heart-healthy pasta dish inspired by the flavors of the Mediterranean, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 8 oz whole wheat pasta
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add chickpeas, cherry tomatoes, and olives to the skillet. Cook for 5-7 minutes, until tomatoes start to soften.
Stir in dried oregano, salt, and pepper. Add cooked pasta to the skillet and toss to combine.
Remove from heat and sprinkle with fresh parsley before serving.
