Indian-Inspired High-Protein Vegetables for Lowering Cholesterol

A delicious and heart-healthy Indian-inspired vegetable dish designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup bell peppers, sliced
- 1 cup green beans, chopped
- 1 cup spinach leaves
- 1 can chickpeas, drained and rinsed
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
Heat olive oil in a large pan over medium heat.
Add cumin seeds and sauté until fragrant.
Add onions, garlic, and ginger. Cook until onions are translucent.
Stir in turmeric, coriander powder, and garam masala.
Add broccoli, cauliflower, bell peppers, and green beans. Cook for 5 minutes.
Mix in chickpeas and spinach. Cook until vegetables are tender.
Season with salt and pepper.
Garnish with fresh cilantro before serving.
