Spiced Indian Scrambled Eggs

Ingredients

  • 4 large eggs
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped spinach
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

In a bowl, whisk the eggs with turmeric, cumin, coriander, paprika, salt, and pepper.
Heat olive oil in a pan over medium heat. Add onions and cook until translucent.
Add tomatoes and spinach to the pan and cook for 2-3 minutes.
Pour the whisked eggs into the pan and scramble until cooked through.
Garnish with fresh cilantro before serving.
