Indian-inspired Paneer Lettuce Wraps

Delicious and heart-healthy Indian-inspired paneer lettuce wraps, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 200g paneer, cubed
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 large lettuce leaves
- 1/2 cup diced tomatoes
- 1/2 cup diced cucumbers
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1/4 cup plain Greek yogurt (dairy-free if needed)
- Lemon wedges for serving
Instructions
Heat olive oil in a pan over medium heat. Add cumin seeds and let them splutter.
Add turmeric, coriander powder, chili powder, salt, and pepper. Mix well.
Add cubed paneer and sauté until golden brown, about 5-7 minutes.
In a bowl, mix diced tomatoes, cucumbers, cilantro, and mint leaves.
To assemble, place a spoonful of paneer mixture onto a lettuce leaf. Top with the vegetable mixture and a dollop of yogurt.
Squeeze fresh lemon juice over the wraps before serving.
