Fiber-Rich Green Salad with Avocado Dressing

Ingredients

  • 4 cups mixed greens (spinach, kale, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, avocado, red onion, walnuts, and pumpkin seeds.
In a small bowl, whisk together the olive oil, apple cider vinegar, lemon juice, Dijon mustard, garlic, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and toss gently to combine.
