Mediterranean Chickpea Salad

A delicious and heart-healthy vegan salad inspired by the flavors of the Mediterranean, designed to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
In a large mixing bowl, combine the chickpeas, cucumber, bell pepper, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
Pour the dressing over the salad ingredients and toss to combine.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
Serve chilled and enjoy!
