Mediterranean Chickpea Salad

A delicious and heart-healthy vegan salad inspired by Mediterranean flavors, designed to support a diet aimed at lowering high cholesterol. This salad is high in protein and fiber, free from nightshades, and rich in plant-based nutrients.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup of Kalamata olives, sliced
  • 1/4 cup of fresh parsley, chopped
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp of lemon juice
  • 1 tsp of dried oregano
  • Salt and pepper to taste

Instructions

In a large mixing bowl, combine the chickpeas, cucumber, red bell pepper, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
Pour the dressing over the salad ingredients and toss gently to combine.
Adjust seasoning to taste and refrigerate for at least 30 minutes before serving to allow flavors to meld.
