Fiber-Rich Veggie Pizza

Ingredients

  • 1 whole wheat pizza crust
  • 1/2 cup tomato sauce (no added sugar)
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1/2 cup chopped red onion
  • 1/4 cup sliced olives
  • 1/4 cup artichoke hearts
  • 1/4 cup diced tomatoes
  • 1/2 cup spinach leaves
  • 1/2 cup shredded low-fat mozzarella cheese (optional)
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

Preheat the oven to 425°F (220°C).
Place the whole wheat pizza crust on a baking sheet.
Spread the tomato sauce evenly over the crust.
Layer the bell peppers, mushrooms, red onion, olives, artichoke hearts, tomatoes, and spinach over the sauce.
Drizzle olive oil over the veggies and sprinkle with Italian seasoning, salt, and pepper.
Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the veggies are tender.
If using cheese, sprinkle shredded mozzarella over the pizza during the last 5 minutes of baking.
Remove from the oven and let it cool slightly before slicing.
