Mediterranean Chickpea Salad

A delicious and heart-healthy Mediterranean-inspired salad packed with fiber, plant-based protein, and healthy fats.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 garlic clove, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
Combine chickpeas, tomatoes, cucumber, onion, olives, and parsley in a bowl. In a separate bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Pour dressing over salad and toss to combine. Serve immediately or refrigerate. Enjoy!
