Indian-Inspired White Rice for Lowering Cholesterol

A heart-healthy Indian-inspired white rice recipe designed to support a diet aimed at lowering high cholesterol, featuring plant-based proteins, healthy fats, and soluble fiber.
Ingredients
- 1 cup white basmati rice
- 2 cups water
- 1 tbsp olive oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- Salt to taste
- Fresh cilantro leaves for garnish
Instructions
Rinse the rice under cold water until the water runs clear. Drain well.
In a medium saucepan, heat olive oil over medium heat. Add cumin seeds and mustard seeds, and sauté until fragrant.
Add the rinsed rice to the saucepan and toast for 2-3 minutes, stirring constantly.
Stir in turmeric, coriander, cumin, paprika, and salt. Cook for another minute.
Add water to the saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and let it sit covered for 5 minutes. Garnish with fresh cilantro leaves before serving.
