Indian-Inspired Mixed Protein and Vegetable Bowl

A delicious and heart-healthy mixed protein and vegetable bowl inspired by Indian flavors, perfect for lowering high cholesterol.
Ingredients
- 1 cup cooked chicken breast, diced
- 1 cup cooked black beans
- 1 cup cooked lean ground beef
- 1 cup cooked lean ground pork
- 1 cup cooked brown rice
- 2 cups mixed vegetables (such as bell peppers, zucchini, and broccoli)
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add diced onions and minced garlic, and sauté until fragrant.
Add the cooked chicken, black beans, ground beef, and ground pork to the skillet, along with the cumin, turmeric, paprika, cinnamon, salt, and pepper. Cook until heated through.
Add the mixed vegetables to the skillet and cook until tender-crisp.
Divide the cooked brown rice among serving bowls and top with the protein and vegetable mixture.
Garnish with fresh cilantro and serve hot.
