Mediterranean-Inspired Quinoa Salad with Lemon Herb Dressing

Ingredients

  • 1 cup quinoa, cooked and cooled
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

In a large bowl, combine the cooked quinoa, chickpeas, cucumber, bell pepper, red onion, olives, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey or maple syrup, salt, and pepper to make the dressing.
Pour the dressing over the quinoa salad and toss to combine.
Serve the Mediterranean quinoa salad chilled or at room temperature. Enjoy!
