Low-Cholesterol Chicken Jalfrezi

A heart-healthy twist on the classic Indian dish, Chicken Jalfrezi, packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 lb skinless, boneless chicken breast, cut into strips
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup canned tomatoes
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp coriander powder
- 1/2 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add the onions, garlic, and ginger. Cook until onions are translucent.
Add the chicken strips and cook until browned on all sides.
Stir in the cumin, turmeric, paprika, coriander powder, chili powder, salt, and pepper.
Add the bell peppers and canned tomatoes. Cover and simmer for 15-20 minutes.
Garnish with fresh cilantro before serving.
