Muamikowba S - Indian-inspired Cholesterol-Lowering Recipe

A delicious and heart-healthy Indian-inspired recipe designed to support a diet aimed at lowering high cholesterol. This dish is rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp chili powder
- 1/2 tsp cinnamon
- 1/4 cup chopped cilantro
- 1/4 cup sliced almonds
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
Rinse the quinoa under cold water and cook according to package instructions.
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
Add the diced tomatoes, chickpeas, turmeric, cumin, coriander, chili powder, cinnamon, salt, and pepper. Cook for 10 minutes, stirring occasionally.
Once the quinoa is cooked, fluff it with a fork and add it to the skillet. Stir well to combine all the ingredients.
Remove from heat and garnish with chopped cilantro and sliced almonds before serving.
