Mediterranean Chickpea Salad with Lemon Tahini Dressing

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 red bell pepper, diced

  • 1/4 cup feta cheese, crumbled (optional)

Instructions

In a large bowl, combine the chickpeas, cucumber, bell pepper, red onion, olives, and parsley.
