Mediterranean Lentil, Bean, and Greens Warm Salad

A delicious and heart-healthy warm salad inspired by Mediterranean flavors, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup cooked lentils
- 1 can of mixed beans, drained and rinsed
- 2 cups mixed greens (spinach, kale, arugula)
- 1 red bell pepper, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
In a large bowl, combine the lentils, mixed beans, mixed greens, bell pepper, red onion, olives, and sun-dried tomatoes.
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Warm the salad in a skillet over medium heat for 5-7 minutes, stirring occasionally.
Serve warm and enjoy!
