Indian-Inspired Chicken Curry

A delicious and heart-healthy Indian-inspired chicken curry recipe that supports a diet aimed at lowering high cholesterol. This recipe is high in fiber, low in sugar, and packed with plant-based proteins and healthy fats.
Ingredients
- 1 lb skinless, boneless chicken breast, cut into bite-sized pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1/2 tsp chili powder
- 1 cup diced tomatoes
- 1 can coconut milk
- 1 cup spinach, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat. Add onions, garlic, and ginger, and sauté until onions are translucent.
Add chicken pieces to the skillet and brown on all sides.
Stir in cumin, coriander, turmeric, and chili powder. Cook for 2 minutes until fragrant.
Add diced tomatoes and coconut milk. Bring to a simmer and cook for 20 minutes, stirring occasionally.
Add spinach and cook for an additional 5 minutes until wilted.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
Serve hot with brown rice or quinoa for a complete heart-healthy meal.
