Soluble Fiber-Loaded Vegan Pasta

A delicious and heart-healthy vegan pasta dish packed with soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 8 oz gluten-free pasta
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add chickpeas to the skillet and cook until slightly crispy, about 5 minutes.
Add cherry tomatoes, spinach, lemon juice, and dried oregano. Cook for another 2-3 minutes.
Add cooked pasta to the skillet and toss to combine. Season with salt and pepper.
