Lemon Herb Roasted Chicken

A flavorful and heart-healthy roasted chicken recipe with a zesty lemon herb marinade.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a small bowl, combine olive oil, garlic, lemon juice, lemon zest, rosemary, thyme, salt, and pepper.
Place the chicken breasts in a baking dish and pour the marinade over them, making sure they are evenly coated.
Cover the baking dish with foil and let the chicken marinate in the fridge for at least 30 minutes.
Remove the foil and bake the chicken in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
