Indian Soaked Moong Dal

A delicious and heart-healthy Indian-inspired recipe for soaked moong dal, perfect for lowering high cholesterol levels.
Ingredients
- 1 cup moong dal (split yellow mung beans)
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
Rinse the moong dal under running water until the water runs clear. Place the dal in a bowl and cover with water. Let it soak for at least 4 hours or overnight.
In a pressure cooker or pot, heat olive oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add turmeric, coriander, and garam masala to the oil. Stir well to combine.
Drain the soaked moong dal and add it to the pot. Stir to coat the dal with the spices.
Add 2 cups of water and salt to the pot. If using a pressure cooker, close the lid and cook for 3-4 whistles. If using a pot, cover and cook for about 20-25 minutes until the dal is soft.
Once cooked, garnish with fresh cilantro and serve hot with brown rice or whole wheat roti.
