Mediterranean Goat Cheese Salad

A delicious and heart-healthy salad inspired by Mediterranean flavors, designed to support a diet aimed at lowering high cholesterol. This low-carb salad is rich in soluble fiber, plant-based proteins, and healthy fats, while avoiding saturated fats, cholesterol, and refined sugars.
Ingredients
- 4 cups mixed greens (spinach, arugula, kale)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 2 tbsp Kalamata olives, pitted
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp dried oregano
- Salt and pepper, to taste
- 2 oz goat cheese, crumbled
- 2 tbsp walnuts, chopped
Instructions
In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper to make the dressing.
Drizzle the dressing over the salad and toss to combine.
Top the salad with crumbled goat cheese and chopped walnuts.
