Mediterranean Chickpea Stew

A flavorful and heart-healthy stew packed with plant-based proteins and fiber to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, diced
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.
Add red bell pepper and zucchini, cook until slightly softened.
Stir in chickpeas, diced tomatoes, vegetable broth, cumin, paprika, turmeric, salt, and pepper.
Bring the stew to a boil, then reduce heat and simmer for 20 minutes.
Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
