Chickpea and Beet Salad with Sunflower Seeds

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium beets, roasted and diced

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard

Instructions

In a large bowl, combine the chickpeas, roasted beets, sunflower seeds, parsley, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
