Lean Beef with Quinoa and Roasted Beets

A heart-healthy and cholesterol-lowering dish featuring lean beef, quinoa, and roasted beets, packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 lb lean beef, sliced into strips
- 1 cup quinoa, rinsed
- 2 medium beets, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
Preheat the oven to 400°F (200°C).
In a bowl, toss the diced beets with olive oil, garlic powder, paprika, salt, and pepper until well coated.
Spread the seasoned beets on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
While the beets are roasting, cook the quinoa according to package instructions.
In a skillet, heat olive oil over medium heat and add the sliced beef strips. Season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.
To serve, divide the cooked quinoa among plates, top with the cooked beef strips, and roasted beets. Garnish with fresh parsley and enjoy!
