Middle Eastern Inspired Eggplant Stew (Aab Goosht)

A delicious and heart-healthy Middle Eastern stew featuring eggplant, peppers, garlic, and tomatoes, perfect for supporting a diet aimed at lowering high cholesterol.
Ingredients
- 2 large eggplants, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 can (14 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat.
Add onions and garlic, sauté until fragrant.
Add eggplants, bell peppers, cumin, paprika, cinnamon, salt, and pepper. Cook for 5 minutes.
Pour in diced tomatoes with their juices. Cover and simmer for 30 minutes.
Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
